If grilling isn’t the best part of summer, I don’t know what is (next to Corona’s on the beach, a summers eve bonfire and a lack of long-sleeved shirts). Here’s a simple side-recipe that you can pair with almost anything you put on the grill. Steaks, chicken, hot dogs… Zucchini is a simple, cheap side to throw on the barbecue for a healthier side dish. The other ingredients are things you have in your house already and Zucchini is less than a dollar at the grocery store.
(DDF Tip: Buy your produce at the local farmers market for fresher, better tasting fruits and vegetables!)
- 1 Zucchini
- Sea Salt
- Olive Oil
- Heat grill to ~350°F. Skip this step if you’re already grilling something else, but be prepared to shorten cook time if the grill is hotter than 350°F.
- Slice zucchini into four spears, coat with a light amount of olive oil.
- Season with salt and pepper. Season from about a foot above the food so as to coat evenly.
- Grill seasoned zucchini for about 3-5 minutes on each side, allowing grill marks to form. Enjoy!
